Rack of Lamb A prime rack of lamb topped with a fresh herb crust and roasted medium, served with a port and cranberry sauce and dauphinois potatoes. Chicken Forestière Sautéed free range chicken breast cooked with mushrooms, shallots, bacon, thyme and red wine sauce, served with dauphinoise potatoes. Seafood Tagliatelli Tiger prawns, fresh scampi and mussels cooked in a cream and tarragon sauce served on a bed of fresh pasta.
